
Deliciously sweet and naturally flavoured, these no-bake cookie dough balls are made with chickpeas, oats, and dark chocolate chips. They are vegan, dairy-free, and gluten-free.
Chickpea Cookie Dough Balls
Serves: 14
Ingredients

1 cup rolled oats
1 tin chickpeas, drained and rinsed
½ cup almond butter
8 Medjool dates, pitted
1 teaspoon vanilla extract
½ teaspoon salt
100g dark chocolate chips
200g dark chocolate
Directions
Add the oats to a food processor and blend until they reach a flour-like consistency.
Add the chickpeas, almond butter, dates, vanilla extract, and salt. Process until a sticky dough forms.
Add the chocolate chips and pulse a few times until evenly distributed.
Roll the mixture into balls, using approximately one tablespoon per ball. Place them on a baking tray and transfer to the freezer for 30 minutes.
Melt the dark chocolate (I use the microwave) and dip each ball until fully coated. Return them to the tray then pop the coated balls back in the freezer for a further 15 minutes before serving.
