Apple, Cinnamon and Raisin Flapjacks

Tasty, simple to make, filling and a big hit with little ones. They are nut-free so ideal for school snacks.

Ingredients

  • 2 tbls coconut oil⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 2 apples⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 2 tbls honey

  • 175g porridge oats

  • 25g ground flaxseeds

  • 1 tsp cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 tbls raisins

Method

  1. Preheat the oven to 180°C and grease a baking tin with coconut oil.

  2. Peel, core and cut the apples then blend them with a splash of water until they are a purée.

  3. Melt the coconut oil and honey together in a pan and add the apple purée.

  4. Add the oats, cinnamon, raisins and flax seeds and stir thoroughly to form a sticky mixture.

  5. Transfer the mixture to the prepared tin, pressing down well, and bake for around 20 minutes, or until the top is golden brown. Allow to cool completely before cutting into squares.
