Beetroot Brownies Recipe

These are very low in sugar, high in protein and gluten-free. They make a great snack and are popular with little ones.

Ingredients

  • 250g dark chocolate
  • 60g coconut oil
  • 100g ground almonds
  • 150g cooked beetroot
  • ½ tsp ground cinnamon
  • ½ tsp baking powder
  • 4 eggs

Method

  1. Preheat the oven to 180C.
  2. Melt the chocolate and coconut oil together.
  3. Blend the eggs with the cooked beetroot then add the melted chocolate and coconut oil and the remaining ingredients to the blender and blend until well combined.
  4. Pour into a greaseproof lined tray bake tin.
  5. Bake for 20-25 minutes.
