Chocolate-chip Banana Cookies

These cookies are so tasty; crispy on the outside and gooey inside. Dairy-free gluten-free and very low in sugar. You can use raisins
instead of dark chocolate chips if you prefer.

Makes 12

Ingredients

  • 2 ripe bananas
  • 2 tbls coconut oil (melted)
  • 3 tbls honey (or maple syrup if vegan)
  • 200g rolled oats
  • 50g dark chocolate chips

Method

  1. Preheat the oven to 170°C Fan. Line a baking tray.

  2. Mash the bananas then mix with the oil, honey and oats. Leave the mix to sit for around 10-15 minutes.

  3. Add the chocolate chips then roll the mix into balls.  I use about 1 tbls mix for each cookie. Pop the balls on a baking tray and flatten into a cookie shape. Bake for around 20 minutes until golden.
